The site appearance is destroyed by extension updates

My first post here. Happy and excited.
We had a fully functional site and were happy with it.
Hosted by Loopia.
Looked really ok.
We are a NGO helping Ukraine, so we need it to be functional for information getting out and to get donations.After Jan 14 something happened. The look/appearance of the site is damaged, by some theme and/or extension update.
An unwanted header is added and hides the background image.
Paddings on the left and rightmost sides are added and the language switcher is gone (Weglot). And everything is somewhat squiggly, unjustified and incorrect. We need to have a clear and readable site and we need the language switcher visible.
I have tried to disable the Automatic Updates of extensions in the Admin
UI but that doesn’t work. Nothing happens. Probably a bug.
I downloaded the backup from Jan 14 with FTP.
Added the line
define( ‘WP_AUTO_UPDATE_CORE’, false );
in the wp-config.php file and I uploaded the whole site again.
Then it looked perfect again. For a couple of hours.
Until it was back to corrupted state.
Received an email from [email protected]
informing about updates of theme and plugins.WHY is this happening?
Why can I not stop this auto updating of the theme Astra and
the extension Spectra – which I mostly suspect are causing this.
This is really annoying and I keep getting calls about it.Kind Regards
