Hello, in the registration form you must assign the profile to which you have set the approval from the administrator.

or, you can assign the profile as a Subscriber and thus can not access restricted pages.
Important is that you have set pages with the role that can access those pages.

Please make sure that you have restricted the right user role. Please go to the Ultimate member -> User roles and select your default user role which your users get upon registration then set “Registration Status – Require admin review”.
