text on main page and inside posts

i love this theme and i mean no disrespect to the people that help support it and its owner carloine but i see some people have tweaked it to replace the “powered by wordpress and caroline theme” to show their own copyright or text, how can i do that? the only reason i ask is i have had several clients end up on carolines website then ask me if she is a trainer here at my company or a client.

also inside each post at the bottom it displays my email address and a date, can i make that not how also?
