Can you let me know if the product/ price shows correctly in the catalogue on Facebook? Or is it incorrect on both the catalogue and Shop?

I did some test and I found the problem.
In WooCommerce when the start date is 21/01/2021 inside the Facebook catalogue you find the day before 20/01/2021.
This is why intagram shows the wrong price.
there is a problem with the synchronisation of dates.

Where exactly are you finding those times on the Facebook side?

Is there a timezone setting on the Facebook side? It looks like perhaps the timezone for the site and Facebook are not the same.

The times on the Facebook side is good : (GMT +01:00) Europe/Paris and in WooCommerce also.
So I think the problem is in your synchronisation.
Can you asked your developper to look after ?
The problem is very constraining in order to manage prices.
