Could you please inform if the form you use is a Subscription form popup?
If yes, you can change it navigating to Advanced section in Subscription popup settings section as it is shown in the screenshot.

Unfortunately, I don’t have that box to type in a new message. I’ve also tried Chromium and Safari. Is there any reason that I wouldn’t see that?

You need to check the popup type you have used.

It looks like I have Popup Builder: 4.0.6. Just the free version if that matters.

Could you please open the popup you have in your WordPress, navigate to “Subscription settings” section and take a screenshot from there?
Kindly ask you to take a full page screenshot like the one below:

You should see the Success Message option in the very end of the options.
It is available in free version you use.
