    There have been a few posts and the standard reply about checking theme and plugins but, no answer that I could find has ever replied with a solution. It was a theme issue for us. The behaviour saw the credit card fields disabled and most likely the payment method because woocommerce then displayed its generic message about do you want to use another method. Of course, the first thing everyone does is check the log, which usually contains something like this:
    2021-03-24T20:53:39+00:00 DEBUG
    ====Stripe Version: 5.0.0====
    ====Start Log====
    customers/cus_JAGMu0iULDL4kb/sources request: Array
    (
    [limit] => 100
    )

    As with most log messages in our business, there is indication of what this actually means. It would be good if someone could answer the question at some point. It certainly appears to be an indication that there is a fault because this log entry does not appear for successful transactions. Beyond that, who knows ??

    From our experience, this is usually caused by a conflict – most likely with the theme but it could be with another plugin as well. In your original message you mentioned this:

    Does that mean that when you switch the theme the credit card fields load as expected? If so, I’d recommend reaching out to the theme support. They’d be in the best position to assist you.
