Stripe manual payment plugin

Hi,

Does anyone know of such a thing as a manual payment plugin generally for WP rather than a plugin specifically for an e-commerce plugin (such as WooCommerce)?

Effectively we have orders being taken over the phone but don’t know the final price until the order is fully processed, so we use manual payments with stripe (so that the payment can be authorised at the time the details are given, and then the final order value is entered later.

I’ve seen plugins which support Stripe but they don’t cover the ability for manual payments or auth-only processing.

I’m looking to create a page only accessible to certain user roles so that staff can process these payments without needing to go into the backend of WP.
