Streamlining my checkout?

I currently sell shirts locally and want a website where people can pay with a credit card. I do not want billing/shipping info. I simply want a name and where I can find them during school (classroom number) What plugin can I use that has extremely flexible checkout editing plus the ability to add products with different sizes and inventory tracking? Thanks!
