start and end time of the quiz

Hello,
We are in the testing phase of QSM.
We are wondering if the following two capabilities are available?

a) We can select a start and end date of the quiz. Can we also choose time slots?
For example:
we would like the quiz to be open twice for 1 hour (ex: from 10 AM to 11 AM, another from 11:15 Am to 12:15 AM) in the morning, then twice for one hour in the afternoon.

b) We would like to create an exam which does not conform to the standard templates available in QSM. Kindly check below and let us know if this is possible?
For example:
Q1. … is a long comprehension text…
1.a) How tall is Paul? (long text answer)
1.b) How old is Paul? (short text answer)
1.c) How much does Paul weigh? (short text answer)
