You can create two different calendars, then use the shortcode for each of them. You can select the type of events you want in your calendars on this section:

Then you can use the shortcodes as usual.

As you can see from https://support.themeboy.com/article/105-event-list-shortcode the “variable” you want is status. So you can use publish for results and future for fixtures.

Is it possible to have one giant table that would encompass all fixtures from a few different leagues?

When you create your calendar, all input is configurable – including teams from different leagues. As well as Status, Event type, Season, Venue, Team(s), Date Range.
