Special symbols and characters corrupt since moving blog

I recently moved my WordPress 2.3.1 installation to a new server. Since then various characters in posts, pages and comments have become corrupted.

For example, Nürburgring has become N??rburgring and ￡25.00 has become ?￡25.00.

If I create a new post and add one of these characters it displays without a problem.

But with over 1,500 posts and many more comments it would take days to manually replace them all. Might there be a quicker fix?
