• Can you tell me how to put a special character, like an apostrophe, in the subject line of an email, without having it converted to ASCII?

Where is it converting to ASCII? There should be no problem with special characters

It changed the apostrophe in the subject line “Welcome to Who’s Who Directory!”
    to
    '

I’m having trouble showing you because this editor changes the code to the symbol but you can see it here: https://www.screencast.com/t/HiLxSUvimGnG
The subject line is supposed to be “Welcome to Who’s Who Directory!”

This is some kind of problem on the receiver’s email client.
I copied and entered your subject on my public installation. No problem, the apostrophe came fine. It’s either your mailing server or the receiver’s client configuration.
