Sorting products in categories

I was wondering if it was possible to sort the products within categories?

Ideally I want to view the categories in a certain product (which is already achievable) and then assign a sort order to them.

I can see that when categories and products are fetch they are sorted by menu_order, but there’s no ability to change that value.
