Sort by number of symbols ($, $$, $$$)?

I’m building a table for a travel website that represents prices as “$”, “$$” and “$$$”. Easy Tables sorts numbers, but not symbols like “$”. Is there some way to sort tables by the number of symbols? It works in spreadsheets, and it would be great if it also worked in Easy Table!
