Site Title & Tagline not appearing on webpage header

I just changed themes to Shuttle and, despite typing in my company name (Phoenix Thriving, PLLC) and tagline into the ‘Site identity’ section of the customizer, neither of these pieces will show up on the actual webpage. I uploaded a logo image and that is appearing just fine.

I’m wondering if the color for this part is coded as white for some reason. I’ve spent hours looking at the code and reading about what to look for and found the following code:

<title>Phoenix Thriving, PLLC – Psychotherapy, clinical consultation, workshops</title>

with ‘&#8211’ following the ‘Phoenix Thriving, PLLC’ and am wondering if that #8211 needs to be changed to #0000 but can’t figure out for the life of me how to edit it in the source code as it will let me highlight it but not edit it.
