Site Speed Sample Rate (%)

I have too little knowledge in this topic and trying to understand what it means. My site is now (hence with almost no traffic yet), and I see your remark “For low-traffic sites it is advised to set this to 50 or higher.”

I just want to understand what is this setting about? What will it do if I set to 50? How to determien properly what setting I should need for my case? Thanks
