Site redesign questions

Hi, I’m redesigning a site in WordPress. My question is, where’s the best directory to install it in? The old site (not built on WP) needs to stay live until we launch the new one. But I know I can’t just move the WP files from say a beta directory to the root once it’s done. Can anyone recommend a best practice in this situation? Thanks!
