Thanks for reaching out. If you’d like to share more details on the checks you’ve been performing with Site Kit and Ezoic I’d be happy to investigate. Note that Site Kit is primarily a wp-admin operated plugin, that doesn’t impact performance for regular visitors to your site. We have more information on this on the plugin website.

In relation to Ezoic with AMP you may also wish to open a support topic on the AMP plugin forums.

Thanks for the feedback. We’re always working to improve wp-admin performance for the plugin. Data is cached and all scripts are minified. While there are no resources loaded on the front end for regular visitors, if you’re finding any delays using the administrator toolbar you can disable this if you wish (Site Kit > Settings > Admin Settings > Display relevant page stats in the Admin bar).
