single post instead of all posts in category

how would you show the latest post only in a category instead of showing a list of all posts?
there are 2 sections on my site. one uses wp_list_categories and the other uses links on a static page.
the link looks like a href=”https://s12195.gridserver.com/category/exhibitions/hooray/”>Hooray!!! and goes to a list of posts in that category.
how would i just show the latest post in the category and not a list in both cases?
