Simple Directory implementation

We are looking to implement a very simple directory using this plugin.

We plan to enter all information at the back-end. No front end entry required by users.

We would like to display a part of the directory when someone clicks on a menu item. For example clicking on menu item “1950-1960 sports cars” will only display those directory items that match that category.

Looking at the demo of the plugin: We don’t require anything that is above the actual listings on the page. We do not require the submit new listing option or bookmark. We do not want users to search for entries in the directory so no search is required, we don’t require any map information, no selection of grid/list.

We would like to display the photo and summary fields and nothing else.

How would this be implemented using the shortcodes with the options category, number of items per page, grid/list view, etc. I read through the documentation and it is not clear to me what has to be set up to implement it the way we need it.
