• Shouldnt there be a feature to allow us to ‘silence’ some plugin/theme update requests if we want to?
    Lets say for example that the current version works fine and we dont want to update it to get new features for it.

    No, because them someone might not see a critical security fix for a plugin/theme.

    Basic Rule of Thumb Security for WP is to always upgrade to the latest versions.

    You can technically do it through plugins, but it’s really not advisable unless you really know what you’re doing. Adding it as an option to the core only serves to make a potentially harmful feature much more accessible to those that don’t understand the risk.

    Search the repository if you really must disable these features, there are working plugins that do this. However keep in mind the importance of watching for security updates and keep things up-to-date manually.
