Should I develop in multi-site?

I am just starting out working with wordpress and actively putting together sites for clients using themes.

The problem is I don’t know how to move sites.

Should I use a multi-site environment to build sites in?
It makes it easy because I only have to maintain a single domain for all my different sites.

Should I use something like XAMP or microsoft expression?

is there a sticky post for moving off a farm to a different domain?
or any resource with step by steps?

Would really appreciate some newbie help from the old guard.
