If using Super Socializer then don’t need Sassy? Is it the same thing?

Yes, if you are using Super Socializer and have enabled social sharing, you don’t need Sassy. Sassy is only for Social Sharing, whereas SS has Social Login and Commenting too, along with Social Sharing.

Does disabling sharing (keep login and comments) turn off sharing or only hide it? Do sharing scripts still load?

It turns OFF sharing completely and sharing scripts do not load after doing this.

How to uninstall Super Socializer completely, also database? Is there tables to remove after deleting Super Socializer?

To remove it completely (from database too), you need to enable Delete options on plugin deletion option from Super Socializer > General Options page in admin area before deactivating and deleting the plugin.

Can Super Socializer get just certain buttons, single button or several buttons by shortcode or php?

Whether you use shortcode, widget or default interface, plugin will show the social networks enabled at Super Socializer > Social Sharing page in admin area.
