The process is different to hide the FLOATED share buttons as opposed to the standard in-page share buttons.
To hide the FLOATED share buttons, you would need to customize this via Shareaholic.com. It cannot be customized via your WordPress admin section (though we are hoping to have the settings added to WordPress in the future).
If you do not yet have a Shareaholic.com account that is connected to your WordPress plugin, here is the process to set this up:

Regarding your other question about Twitter: This is because Twitter itself does not track share counts. Shareaholic retrieves its share counts from the 3rd party services directly, such as Facebook, Twitter and Pinterest. But since Twitter does not track these share counts we are not able to display them on your website.
