setting service category for an appointment

Hello,
how can I assign a service to a category after the client has successfully booked an appointment?
This assignment is meant to be done for an appointment by the staff as it will be used for internal purposes only.
The services can be of different categories (cat-health srv-consultancy, cat-nutrition srv-consultancy, …) and this assignment is not to be done by the clients choice. This means I can’t create differenciated services.Thanks and kind regards
