Setting defaults in twentyeleven child theme

When I set up a new site I have some specific formatting. I delete the comments form, remove the header image, and adjust the white space. I have learned how to make these changes in the child theme so they are permanent irrespective of the theme version.
However, I have NOT discovered how to specify permalinks as %postname% or to set the theme to one column, no sidebars. (Yes, I know the default page is single column, but when this option is selected in appearance-themes, the page width is reduced.)
I would appreciate advice for setting these so that switching to the child theme will automatically set the site for my preferred formatting.
