Send email notice for orders with extra fields filled in

This is def a question about the pro version. I want to have a checkbox in Checkout that if checked adds a few extra fields to the checkout process. I’m wondering if there’s a way that the website can recognize if the checkbox is checked and if that order gets submitted that it also sends a notification email to a specific email address?

Mostly we just need to be able to easily filter out all the orders that have this checkbox checked.
