Segment in MailChimp on WooCommerce Variation Data

If you don’t mind, I’ll tell you my general issue, then explain the details…

General Issue: How can I send WooCommerce variation data to MailChip to create segmentation on my variation data?

Details: I’m selling workshops on my website through WooCommerce & each workshop by design has a dropdown field (created through WooCommerce -> Product -> Variations) called “date.” The buyer chooses the “date” they want to attend before putting it in the cart. [This would be similar to selling a “shirt” as a product and allowing the customer to choose the size, i.e. XL or L, prior to purchase.] I’m trying to setup a campaign for all customers who signed up for a particular workshop based on this date data they selected. Is that possible? If not, any ideas for another way I could solve my problem?
