For mapping wise/only importing certain data, I’d suggest reaching out to the WP All Import team.

If the import is being skipped it usually means a setting somewhere or mapped wrongly.

You also mentioned that on your end it’s set to not update in the setting; so this double confirms that a setting or mapping has some issues.
