Search Console not displaying real results for discovered URLs

If you view the main sitemap and the links within it, there are lots more Pages, Products and Posts etc than what Search Console is conforming when submitted. https://www.j-flex.com/wp-content/uploads/2024/01/search-console.png

What can I do to ensure the many missing pages urls are picked up?

Also, how can the two – /layout_category-sitemap.xml – and – /wpfcas-category-sitemap.xml
