You can use the woocommerce_structured_data_product_offer filter to dynamically alter the price we output in the structured data:

However, doing so will require some custom code. You can see a couple examples on this page:

… which show how to remove certain things. You’ll want to alter those to suit your needs of course.

I just need to change the price excluding VAT to price including VAT because I use a plug in to structure data.
