The scheduled task runs once daily, except when network activated on multisite networks — then it runs hourly and hits 5 sites per hour by default. You can change the number of sites per hour with the delxtrans_ms_limit filter.
The scheduled task only deletes expired transients. Deleting non-expired transients would normally slow down a website, so it’s something you would only want to do during development or after upgrading software (plugins, theme).
Do you have a reason for wanting to vary from the default? If you can explain your scenario, maybe we can work something out.
