Saving PDF to server

My organization needs forms that can be used by employees of the NC Division of Adult Correction and Juvenile Justice to refer youth for our care. In order to do this, we must follow strict HIPPA guidelines.

HIPPA requests that rather than have form entries sent via email, we have the entries saved as a file on our server. We have just installed the Gravity PDF so that the entries will be saved as PDFs. Is there a way for the files to be saved on our server somewhere (maybe in a subdirectory?)
