Require a picklist using “select one” as the default

I have a picklist that I want to require but I don’t want to have any of the selection items shown by default. I want it to say “select one” in the visible field, and then if someone does not choose one of my options from the dropdown, the form can’t be submitted. In other words, it’s required to choose something other than “select one”. Is there a way to do this?
