Request tutorial for Simple Tags plugin

With so many downloads and so much praise for Simple Tags plugin, I am beginning to feel pretty stupid for having to ask for help.
I have spent a couple of hours installing and setting up Simple Tags and have read everything I can find on the internet (including an 8minute YouTube video which called itself a tutorial but was of no help at all).
I still find the plugin mystifying. It doesn’t do what I think it is supposed to do.
Is there a detailed tutorial for the current version of Simple Tags plugin?
