Replacing existing Joomla with WordPress

Dear all,
I will need to totally replace a client’s Joomla site with WP site that i develop. I don’t need to import anything from the old joomla site. I just need to replace it with the WP site. But I do need to keep the back up copy of the Joomla site, or I might think to keep it running for a little while on a subdomain.My question are:
– What is the best practice to suit my plan? How should I install the new WP site without totally shut the old site down? Can I install the WP site first on a sub folder and make it running, then later move it to the main home directory? Or is there a better way?
– I know nothing about Joomla. How do I put the Joomla site into a maintenance mode? What is the best way to back up joomla site? Should I just use the back-up function on the cPanel?
