replace 'uwpqsftaxoall' or 'uwpqsfcmfall' default values

Please! tell me there is a simple way of replacing ‘uwpqsftaxoall’ or ‘uwpqsfcmfall’ with default taxo or metatag value or just “”, it would make this much easier to setup without these.
I have Multiple dropdowns, one taxo, two metakey, search results depend on selection from one to all three.
Problem: First taxo dropdown working fine, shows All, if you select default, but by adding second meta dropdown it only shows results from taxo with metakey values assigned to them by default.
By using firebug I removed ‘uwpqsftaxoall’ or ‘uwpqsfcmfall’ and it works how I expected it to, so not only should the text be optional to change, ideally the value should have an option to be changed for default main parent category or sub category by name or just “” meaning it will list all and NOT use ‘uwpqsftaxoall’ or ‘uwpqsfcmfall’ as part of search criteria.
Another bug ‘Exclude’ option, shouldn’t this be include? OR should there be ‘Include ONLY’ option AS WELL! ‘Exclude’ only exclude currently selected at the time items? any newly created categories are not excluded and therefore SHOW in the returned search results?????? bit illogical isn’t it? really does not make sense to me. explain logic for this.
