Rename Category drop down

Hi.

I am using the category widget on my sidebar using the dropdown option and it is working well.
What I would like to do is rename the default selection in the dropdown from “Select Category” to “Select Country”.
Is this possible with this widget or does anyone know of another plugin that can do this?
