Yes, the updates and notifications will continue working normally, the hardening removes the version number from the HTML code that is rendered with people load your website, which is used by malicious people to recognize the vulnerabilities that may affect your installation.

There is not a button to revert this specific hardening because it does not affects the functionality of the website, I may include it in the future but there is no need for it at the moment.
