Remove / Replace special character

Hello all,

Im using Contact Form 7 Dynamic Text Extension to receive requests from some users (quarantine release). Unfortunately, two special characters (< >)are submitted whith the address, which cause serious problems afterswards.

Since I could not find something related, is there any way to remove the two brackets around the smtp address when the users submits his message?

The output of sending the form is another link, within this link I need the brackts to be removed (no <[email protected]> but [email protected]).
