I want to register volunteers but not tied to any opportunity, later create an opportunity or several opportunities and registered volunteers can accept or decline the opportunities
There isn’t currently a way to automatically opt-in volunteers to specific opportunities. Your only option is to send them a link to the opportunity and let them sign up if they’re interested.

Once someone fills out the form to sign up or express interest, you can email them and the rest of the individuals that have signed up from the edit screen for each opportunity.
Also, is there a simple way to add more fields to the form? or use another plugin for forms?
You can do this using the template system included in the plugin and the plugin’s hooks, but it does involve a decent amount of coding knowledge.
