But I still do not understand very well the 100px or sizes to be used.
On my head I would like to see when I create a table in tablepress an option that could ask me the size of the total table, like 25% of the full page or 50%.

everytime I create a new table and use the short code on a post or new page it uses ALL the page width.

Hi,

correct, by default, a table uses 100% of the available page width.
Changing that (and positioning tables side by side) requires a bit of extra HTML code and CSS as in that example.
