Recreating Galleries After Removing Defunct Plugin

My client is currently at countdowntomexico.com with a very old WP installation dating back to circa 2009.
I am currently recreating her blog with an up to date installation at testsite.countdowntomexico.com. Once it’s just like she wants, I’ll be deleting the installation at the root domain and moving the new version over.
She has been using a plugin called NextGEN Gallery to display her pictures. This plugin is so old that it has been replaced by an entirely new version of it. From now on, she wants to use the new plugin to create her galleries.
The problem is what to do with the galleries on her 600 previous posts. She is very daunted by the thought of recreating them all with the new plugin or within the WP interface. My initial thought was that since all her photos are in her media folder, she could just select the ones relevant to each post and create a new WP gallery with them. But then, she’d lose all her captions. Moreover, the way the old plugin worked, the relevant pictures don’t show up in the “pictures uploaded to this post” sort.
So I’m wondering if I could get some suggestions on the most efficient way to recreate her galleries and whether she should keep using a plugin or just stick to the WP interface. Thank you!
