Questions about sorting entries in the backend

Hello
I have two questions about the backend:

1. Where can I set that when I open my directory the addresses are sorted by title a-z (permanent).
2. Where can I enter the logo for the site – I found the location at the beginning – but can’t find it anymore ??

Finally: I import my addresses from a main database in our club administration. Is it being considered that there could be an update function to update the addresses. Now I always have to do all updates for both, an update function could save a lot of work.
