published then want draft

I have a post up then want it to be a draft (off site totally) but might put it back later. Also, have it on a catagory page. It still shows up on the catagory listing and there is a 404 error page. I do not want a 404 page either. What do I do?

I even tried to totally delete the post and it still shows up on the catagory page???
