profile_update Webhook Always Passing Old

When creating the profile_update webhook, you can select either the old (prefaced by old_) values or the new values.
Even when selecting the new values (email), it’s still only passing the old value when a second profile update is made. It appears to be the same value result whether passing the old_ prefaced field or the non-prefaced field.
Using Zapier and catching the webhook there.
