How are you converting simple products to variable? From the product edit page, or via CSV?

In this case, I’d recommend to consider using an in-bulk conversion method for the products, for example the one explained here.

My question wasn’t aimed at changing many products. That can be solved in different ways (WP All Import, directely in MySQL, …)
My intention was to help the shop manager, who has to change a product or two a month, when a new e-book is released (as a variation on an already existing print book).

To be concrete: Is there a way to set the attributes to NO in case of “Used for variations” by default? I thought that would be possible with a small code snippet.

The “Used for variations” checkbox can be kept checked or unchecked as needed, but that needs to be done manually. There is no inbuilt way to do that automatically or set that as a default.
