I have checked my test website and I can see the Product short description section as shown in this screenshot: https://d.pr/i/G7Ak4J

Could you please see if there are any fatal-error logs from WooCommerce > Status > Logs? If you see any fatal error logs, please copy/paste the content of the error in your reply so that we can have a look. The page would look something like this: https://d.pr/i/cfKUYK

Also, in order for us to get a better understanding of your site setup, could you please share a copy of your website’s System Status Report?

You can get it by navigating to the WooCommerce / Status section of your site. Once there, click on the Get system report button and then copy it by clicking on the Copy for support button. Then paste it here in a comment.

Hi @infinitycreative

The fatal errors log seems to be related to the Rank Math SEO plugin.

Can you temporarily disable the Rank Math SEO and Rank Math SEO Pro plugin and then check if the Product short description section shows up in the Edit product page?

I deactivated Rank Math SEO, but Product short description section still not visible on edit product page

Update:

I had Advanced Custom Fields PRO installed, but I removed this plugin as no longer using it.

So I thought I would add back Advanced Custom Fields to see if that made a difference.

And now the Product short description is back, but if I deactivate Advanced Custom Fields the Product short description disappears again.

Why would this be the case, any help would be much appreciated.

I am not entirely sure what caused this, but it could be related to something in the database tables.

For this, could you please run a database update by going to WooCommerce > Status > Tools > Update database?

Another option is to go to WooCommerce > Status > Tools > Verify base database tables – this can verify the database tables and make sure they are correct.

I would also suggest taking a full website backup and then reinstall WooCommerce plugin so if something went wrong with the previous installation due to another third party plugin, it should be corrected by reinstalling it.
