Problems with saving drafts

Hello:
There doesn’t seem to be a way to save a draft of changes of an already published post. Is this currently possible? Is this something that will be fixed in the Gutenberg update?
Also – trying to schedule the publishing of changes to an already published post results in the post disappearing from my site. Is there a fix for this?
