To be clear because it doesn’t bad after posting the message :

When i receive the email the apostrophe is not encoded : “'” and the subject is between quotations marks.

    How to correct this ?

    Hello Juliette,

Please try to type the quotation mark manually from your keyboard. I think this happens because you copy/paste the text from Word and the ‘ is a specific character, which is not allowed.

Please let me know if this solves the problem, or we need to look further.

    Best wishes,

    Hello Juliette,

The e-mail text is configured inside the “Mailjet subscription widget” settings – Step 3 (Customize notifications):
    https://prnt.sc/edwdgz

Once inside Step 3 – scroll down to “Subscription confirmation email”. The e-mail heading is inside the second text box – “Subscription confirmation”
